MEDITERRANEAN MACKEREL SALAD

Ingredients
- 2 tins of mackerel in olive oil
- 1 1/2 cup of cherry tomatoes
- 1/2 cup of kalamata olives, pitted (or any other olive of your choice)
- 1/2 red onion, thinly sliced
- 2 cups of cannellini beans, drained and rinsed (you can substitute with any other bean of your choice)
- 2 tbsp of extra virgin olive oil
- 1 tbsp of lemon juice
- a handful of parsley, chopped
- sea salt and black pepper to taste
Method
- In a medium-sized bowl, combine the mackerel, tomatoes, olives, red onion, beans, olive oil, lemon juice, and parsley and toss to combine.
- Season with salt and pepper.
You can refrigerate the salad in an airtight container for up to two days.
